Our story
An intimate story, a place guided by intuition
Here, everything begins in silence. In Fabrezan, at the foot of the Corbières, a 10-hectare enclave was chosen over twenty years ago, not to produce more, but to do things differently.
Differently, meaning with absolute precision. This vineyard, which Pierre Bories tends like a personal garden, is a place of reflection as much as a place of production. Here, he chose to free his gesture, to step away from market constraints, to vinify consciously and, above all, naturally, long before it became fashionable.
Since 2003, all cuvées have been vinified without any additives, using indigenous yeasts, with zero sulphur during vinification and only a minimal dose at bottling, for a total below 30 mg/L.
This estate is not a showcase. It is a workshop of truth, a discreet yet essential place where the winemaker’s hand serves the grape and the soil.

Our terroir
A terroir for contemplation
At first glance, the vineyard could go unnoticed. Nestled in a wild landscape, sheltered from the wind and from view, it is a silent enclave overlooking the Corbières without imposing itself.
But for those who know how to listen, it tells a story:
- Deep, living soils, between red clays, sandstone and limestone veins
- Naturally low yields, around 25 to 30 hl/ha
This place is not exuberant. It is measured, rigorous, almost monastic. Everything is designed so that the wine expresses what gave birth to it, not what is expected of it.

The cellar
A cellar of simple gestures and deliberate choices
The cellar reflects the estate: discreet, without artifice, on a human scale.
Here, work is done by gravity, without pumping. Fermentations are spontaneous, macerations gentle, without mechanical extraction. No fining. Whites are vinified in temperature-controlled stainless steel tanks or in barrels, depending on their profile. Reds rest in tanks or barrels used for several vintages, never to perfume, always to refine.
Each cuvée is aged without haste and bottled without disguise or make-up.
Because the beauty of a wine here is measured by its precision, not its shine.

Our commitments
A free and sensitive viticulture
The estate is farmed organically, but our commitment goes far beyond official specifications. Our vision of the living is practiced in the field every day, through simple gestures and clear choices.
- Soils are worked without herbicides, microbial life is preserved, and spontaneous ground cover is welcomed as an ally, not an enemy.
- When winter comes, our sheep graze in the vineyards, naturally weeding, fertilising the rows and recreating a forgotten link between livestock and viticulture.
Everything is designed to reduce our footprint, slow the pace and place people and living things back at the heart of the vineyard.
Here, the vine grows as it lives: without artifice, without brutality, with respect for the time it needs.
